Tonight I'm making a lemon-almond pound cake for the job Christmas party on Thursday. If I remember I'll post my recipe later, it's very delicious and fairly simple.

I want it! It sounds wonderful!

"visualops" Lemon-Almond Pound Cake

1/2 cup finely ground blanched almonds
2 sticks unsalted butter, softened
1 cup sugar
4 large eggs
1/4 teas. lemon extract or some grated lemon rind (you can vary this and substitute vanilla or even brandy or rum extract)
1 1/2 cups flour
1 teasp. baking powder
1/4 teasp. salt
1/4 cup lemon juice

Combine ground almonds and sugar
Cream butter with sugar (beat at medium until blended)
Add eggs one at a time
Add extract (or rind)
Sift together flour, salt and baking powder
Beat in flour and lemon juice alternately(about 3 turns), beginning and ending with flour. Allow each to get absorbed as you alternate.

Bake at 350 deg. for 40-50 minutes in a greased and floured 8" cake pan. You can use a bundt or angel cake pan if you like.
I drizzle the top with a glaze of XXX sugar with lemon juice and a bit of heavy cream.
