Change over time to a different critter is evolution as it was defined to us all the way back in Highschool. Display of built in characteristics within the genepool for a given critter is showing diversity within a species at best - not evolution into something else. IE, you're grasping at straws.

Variation is one part of the theory. It's a complicated theory, having two parts: variation and selection. That may be too much for you. Just try to get one thing into your head and then take a week off.
