OK, I know I'm late here but I'm baking Lady Laura's cookies right now. They're WONDERFUL!!!
As for the chocolate chips, don't you know you're supposed to EAT 1/2 bag first, to check the quality of the chips? You wouldn't want to serve cookies with stale choc. chips to your family, would you???? LOL!
I used 1/2 semi sweet and 1/2 milk choc. in my cookies. And the cherries do add a nice touch. Couldn't put the nuts in because my family doesn't like them, but might put them in 1/2 the recipe next time.
As for Terayyyyzzza cooking, yeah, right. OTOH I can see Laura mixing up a batch of cookies, overseeing her girls' homework, and George walking up sticking his finger in the batter for a taste and patting Laura on her bottom as she scolds him. :-)
Anyway, the recipe is a keeper!
Recovering_Democrat Those are someones children you havent recovered enough yet !
1 1/2 cups (3 sticks) butter, at room temperature
1 cup sugar
1 1/2 cups light-brown sugar
3 eggs
1 tablespoon vanilla
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
3 cups quick oats (not old-fashioned)
2 cups chopped walnuts
1 1/2 packages (8 ounces each) chocolate chunks
(3 cups) 2 cups coarsely chopped dried sour cherries
Heat oven to 350°. With electric mixer, cream butter and both sugars. Beat in eggs one at a time, then beat in vanilla. Add flour, baking powder, salt, cinnamon and oats; slowly beat until blended. Stir in walnuts, chocolate and cherries. Drop by tablespoonfuls onto cookie sheet covered with parchment paper. Bake at 350° for 12 to 15 minutes, until golden brown. Makes about 8 dozen.
