The problem is there's no human STRONG enough to perform a kasher slaughtering on it -- the neck is too tough and too thick. That is very interesting! I hadn't heard that one. Well, those lucky giraffes. I almost saw a whole line of giraffe patterned plates and huge neck steaks in the freezer. (Do we even eat "neck?")

yes, we eat neck, and lungs. Pretty much any part of a kosher animal except the blood, certain prohibitted fats, and the sciatic nerve.
