My mother loves unhatched eggs! Before they became really hard to locate (when I was a kid we used to be able to buy 'em at the local supermarket), she would put them in chicken soup. She said they tasted like velvet, but I never quite worked up the nerve to try them.

Now, my father loves petchai (garlic-flavored calves' foot jelly with hard boiled eggs in it), but my mother won't stay in the same room with it.

Unhatched chicken eggs ("baloot") are a delicacy in the Phillipines, from what I recall.
