. If you are a believer in a religion you can't pick and choose what is and what isn't.

Depends on the religion. Catholics and other "orthodox" religions (and orthodox branches of others) say the same: Our doctrine is the One True Doctrine. Others, including many forms of American protestanism, some Episcopalian, etc. allow a broader personal interpretation within guidelines.

Can one be a Biblican Monotheist and/or a Christian and be a Evolutionst? Sure -- even the Catholic Church allows for alternative interpretations of parts of Genesis and some parts of the Old Testament. For that matter a lot of the Bible is still being interpreted by the Catholic Church -- that's why they have Jesuits.

If one group of people are going to interpret the bible one way and another group another way. The religion has no believability. I am not going to say that most people don't really believe, but I do think many believe because they think it's what you need to do to have a good moral background, hence the statement god fearing. How many people say they are Christians and don't attend mass on a regular basis. I know the Catholics must go every week or it is a sin.
