I think the reason your lips get all tingly from drinking espresso is because of all the VOC's that don't cook off since it's produced so quickly and the isoflavanoids that are in espresso too. Perking or dripping your brew burns off those complex compounds.

The best tasting (and incidentally, the highest caffeine) is from soaked coffee. If the fine ground coffee is soaked for at least 12 hours (up to 24) and then strained out, it is very tasty but doesn't have some acids since they are released by heat. If the coffee is made super strong, hot water can then be added. I used to make it that way in the summer, and add cold milk and ice cubes.
Once people try it, they really like it. It's easier on the stomach.
I try to avoid drinking coffee now though, makes me nervous.
