10oz. pkg Vigo ( or an authentic brand ) yellow rice.
1/2 or more green pepper
med. or more onion
small or med. jar pimentos, sliced is best
1/2 can or more beer
couple cloves of garlic
poultry spices
paprika
salt and pepper
place yellow rice in 9x12 baking dish, add beer.
add diced green pepper and diced onion.( reserve some of the pepper and onion to add on top sliced)
add minced garlic and about 1 cup of water.
place chicken pieces, usually 2 thighs,2 drumsticks, 2 breasts on the rice.
add more water to about 3/8 inch from the top of the dish.
sprinkle seasoning , and paprika on the chicken.
place slices of green pepper, onions and pimento between the chicken pieces.(adds color and flavor)
bake at 325-350 for one hour. ( usually bake covered about 45 min, then check to see if it needs more water. Then leave the cover off to brown the chicken. If it looks too watery, bake longer but don't let it dry out.
Black Beans
i can Vigo black beans
diced onion
diced green pepper
1 tblsp olive oil
1 teasp sugar
put beans in saucepan, add 1/4 c. onions and 1/4 c pepper.
add oil and sugar.
cook on low about 1 hr. stirring often.
I usually start with the beans and it all comes out together.
serve the beans on top of the rice with some fresh chopped onion. Or separately.
I told you I swagged it. None of the amounts are written in stone.
The most important thing is to get real yellow rice and black beans. Harris Teeter carries Vigo rice. Mahatma and Progresso don't 'cut' it.
