Hi Carlo,
Please add me to your low-carb ping list. My dh has been trying Atkins since Christmas... He has lost between 7 to 10 lbs. Not as much as we had hoped.... but he is diabetic and I think may be in the "resistent" category - may need to add some sort of supplement as Atkins says - also he needs to exercise more for sure!

LowCarb El Paso Chili Rellenos
- 27 oz. Whole Canned Green Chili's
- 22 oz. shredded Cheddar Cheese
- 6 lg. eggs
- 1/4 cup almond flour (ground blanched almonds)
- 1/2 tsp. salt
- pepper to taste
1) Grease or spray flat baking dish.
2) Blend eggs, almond flour, pinch of salt.
3) Pour 1/2 of mixture into bottom of dish. Place a layer of chilis on bottom of dish. Layer 3/4 of the cheese on top of the chilis. 4) Add rest of chilis and cover with the rest of the egg mixture. Sprinkle remaining cheese on top.
Bake at 375o for about 30 minutes.
