I was just wondering what to do with the chicken for dinner and I love coq au vin

 LowCarb Breading

• 3 oz. bag of pork rinds, crushed
• 2 eggs, beaten
• 1 tsp. poultry seasoning or Old Bay seasoning (see below)
• 1/2 tsp. pepper


1) Coat chicken, or whatever, with egg.
2) Mix other ingredients.
3) Roll chicken in mixture to coat it.
Pan fry chicken in butter or olive oil.
 

Old Bay seasoning
 

• 1   tablespoon celery seed
• 1   tablespoon whole black peppercorn
• 6    bay leaves
• 1/2   teaspoon whole cardamom pods
• 1/2   teaspoon mustard seeds
• 4   whole cloves
• 1   teaspoon sweet Hungarian paprika
• 1/4   teaspoon mace


1) In a spice grinder or small food processor, combine all of the ingredients.
2) Grind well and store in a small glass jar.
