Yellow Sucker. Well, not actually, but it should be. Best tasting fish I have ever had-when prepared properly. Score edges of fillets. Roll in cornmeal/flour and place in HOT fryer. Pull out when it turns a golden brown. Love it!
Channel Catfish is alas, the State Fish of Missouri. Oh, and the Norton/Cynthiana Grape is the State Grape...Makes good wine.
