Yep, I indeed have your recipe for a great Tortilla Soup, with a bonus.. It's LowCarb.. Yehaaaaaaaa! LowCarb Red Robin Tortilla Soup
1) In a heavy soup pot, sauté the onions, celery and garlic in the butter.
2) Add the bell pepper, broth, cream, Rotelle, cumin and beer and allow to come to a boil.
3) Turn down the heat and allow to simmer for ten minutes.
4) Add the cream cheese, turkey, Parmesan and masa and continue simmering until thick, about 20 minutes.
Serve hot and topped with grated Cheddar & Pepper-Jack cheeses, sour cream, tortilla strips & sprinkled with green onions.
