If your child is competent and within reasonable bounds as a family member and student, no, you should not snoop; they should receive a reasonable expectation of privacey.

But yes, if your minor child is obviously in mental health distress, you should snoop on their email or diary to find out what you are dealing with and how to approach bringing help. It's your house, your rules, your money and your responsiblity to support them, protect them, and help them.
