So we shouldn’t eat curry anymore, unless we have rancid meat?

Not what I said, but if you have a personal habit of chomping on maggoty flesh, curry might be just the thing for you!

For the completely uninitiated it’s a good background.

A couple of things were skipped because of the historian concentration on the subcontinent of India.

Of further interest is that curry as a sauce or seasoning originated and became a pub sauce which according to Leigh & Perrins was further developed into Worcestershire sauce.

Old Bay is essentially, rubs, shaker salts etc... are currys.

I use Cajun two step. They call that seasoning it’s really a curry by definition. Just like a Cornish lunch are the origins of a Mexican empanada. It’s all Fusion at some point.

Fried Chicken comes from Scotland the seasoning - Africa Caribbean connection.

Curry’s are like a spice pandemic... carried to the 4 corners, of a round globe. by traders...

After years of figuring things out and a stint as a military cook, I have learned that curry (by any other name) is just like every other staple...

Every country has its pancake just as every country has its hot sauce (or spice sauce or if you will, “curry,” roux, gravy... spices will vary).
