It’s easy to dismiss the effort, but until one does this it’s impossible to grasp that Belgian fries are simply the best fries on the planet.
That double frying was why McDonald’s fries were good back in the day, even after they switched to vegetable oil (just not as good as when they used tallow). When I worked there 50 years ago, we made fries out of fresh potatoes that were peeled, sliced, washed, blanched at 280 degrees, and cooled before the final frying at (I think) 325 degrees. This allowed the interior to cook before the outside is finished to crispness. The Belgians apparently invented two-stage deep-frying of potatoes a long time ago.
If you try to fry potatoes from raw to done in one step (as many restaurants do), the outside will get overdone before the inside is completely cooked. They might taste OK for the first minute or two out of the fryer, but pretty soon they’re not so good.
I don’t know if the frozen French fries that McDonald’s uses today are partly cooked before freezing, but I would suspect so.
what a great thread!
Cannot wait to try the mustard sauce, LOL.
Had a mustard sauce with some crab and it was AMAZING.
Thanks to all,

SO beautiful!
As delicious as it is beautiful ! Cheers from Japan !
My father used to snack on sardines, I liked them too, only child of seven that would ask for a bite of sardines.
I eat them several times a week for lunch. I add them to ramen along with a hard boiled egg. Quick and easy, tasty Inexpensive lunch .
And can be had for under a buck for 2 pieces in Japan !
Funny thing on sardines
If you don’t preserve their context in the dish then like anchovies they become umami basically
They enhance the taste after they disintegrate
I was raised immersed in creole food and some Cajun
Given my area of Deep South
It’s always difficult to maintain trinity integrity in dishes
If you add to early
And fish is worthless if not added late
Sardines are vulnerable
Normally, when I eat sardines, I open a tin and immediately dump it into the trash and dispose of it immediately . They are delicious that way.
Yeah you can buy that in Walmart but it’s pricey.
A can of sardines is only $1.
No doubt, and Thank you!
Domo arigato.
