The average height for a Mexican man back when everyone subsisted on corn, beans and chilies was under 5’4”. Today, it’s almost 5’8”. I think the argument that beans are a “subsistence” protein based on stunted growth has some legitimacy.
The beans are soaked overnight then drained and rinsed then put in a pot with freshwater and the seasonings. Cook for an hour or two then drain and set aside the liquid.
You then layer the beans and bacon and onions in the Dutch oven. I believe some more seasonings are added and some of the liquid is poured back over the beans so they will not dry out as they bake you save the liquid in case you have to add any along the way during the day. But at the end the beans are moist but they are not swimming in any liquid.

Usually I use the cannelini beans.
I use the dark red kidney beans for minestra:
Boil escarole & remove, saving the water to boil the ditalini (so the vitamins soak back in).
Strain. Add the beans, simmer until hot.
Serve with grated parmesan.
Delicious, nutritious, and cheap.
