Canned bread makes sense under water.
Love potatoes. Maybe inherited that trait from my Irish grandmother.
I eat potatoes every day. Don’t eat bread. so nice little steamed red potatoes are my starch. Toss them in stews, mash with butter and garlic grains, slice thin in omelets. Am known for best potato salad ever, which I bring to all our potlucks at request of neighbors.
BUT. A CANNED POTATO IS NOT A POTATO.
maybe its different now, but decades ago, it used to be that all the grade #1 of most fruits and vegetables went into cans - grocery store similar items consisted of seconds and culls.
Count me in, never seen them nor would I buy them.
But I do love Canada they always you give gravy with your French fires. Hummm gravy.

If the potato chunks are smaller, the more actual product, and less water in the can. Bigger chunks = more water, and less chunks can fit in the can without squishing the product.
Just a way to mask inflation.
BUT. A CANNED POTATO IS NOT A POTATO.
