Non-medic here, but here is a layman’s guess: The virus spikes plug up the orifices necessary for the molecules of the substance to be smelled or tasted. Eventually you grow new cells with the correct orifices and your sense of taste & smell return or the plugs get expelled?
Where are the biology people? Seem as though a lot of “science” is asleep at the switch.

Yes, nothing at all. The only way I knew I was positive was from Urgent Care. My girl friend from which I caught the virus, had it REAL bad. Go figure. I am 76 she 72, both high risk, her even more so. Health Dept said we could possibly both get it again.
It is so odd how Covid effects people so differently. A 20-something co-worker of my daughter recovered months ago but is winded after walking 10 feet.
An 80 year old woman was in the hospital for a few days and is now fine. Her 85 year old husband was tested and had it - but never showed any symptoms!
Yes. Goes to show you that the CDC and ‘Medical Experts’ don’t have much of a clue.
