I thought COVID is only airborne and cannot be acquired by touching things.
I have been a server, too, and I know exactly how hard they work and how they get screwed on pay and how dependent they are on tips.
If she was performing as required by the business, they (the restaurant) need to eat it and give her 15%. It’s not as much a I would normally tip, but better than nothing. But it is the restaurant’s fault she lost the tip and they should make it good.
If the business has a “wear a mask” poster on the door, the customer needs to comply or eat elsewhere. BUT if the customer doesn’t wear a mask, the DEFAULT assumption should be that the customer has a medical reason for not wearing it. My wife has asthma and these stupid masks are playing merry hell with her comfort. I am tired of my glasses steaming up.
Unless the unfortunate customer is in California where they have really idiotic expectations like wearing a mask between bites. In which case the customer should tip the server (she didn’t have a choice) and otherwise ignore her.

If asked courteously you should respond courteously. Otherwise, consider leaving.
That waiter is not the one mandating masks.
My nephew is so indoctrinated about CoVid that yesterday he decided to get all the Coronavirus germs off of his small bills (2 $5s and 10 singles). He decided that microwaving them might work because he can put paper in the microwave and it doesnt burn. Anyway, I have no idea how long he set it for, but he returned to find a mess. The bills were completely burned to a crispy black sooty blob with chars of smoke all over the sides and interior top of his unit. He said it smelled like burned marshmallows.
I just have to shake my head. Oh, hes turning 39 soon, so this wasnt some youngster.

I frequently write in "CASH" on the tip line. They love that! Yes, I do leave cash. Bartended for 25+ years, so I tend to overdo the tips.

I've seen the bus people (it's not just boys any more!) using some kind of wipes on S&P shakers and sugar bowls at our favorite pub between seatings.

Yep. In MI the maskstapo still persists. I do as business’ signs request out of respect for their decision not to be a test legal case (and exactly that; on before my toe crosses their door, and off 3” after my face hits open air).
I do the opposite. I am tipping 25% when I go to the Waffle House, as they do not give a hint of grief. At places that are reasonable but not full service (so no tipping), I let the cashier know that I appreciate the atmosphere, treating customers pleasantly in a difficult environment.

My son has been a waiter and a bartender for years. Until CoVid he could somehow manage dealing with lousy customers who dont tip at all, or dont tip much.
During lockdowns he has decided he has to move on to doing something else and is still sorting out whats next for him. Luckily, hes very frugal. We still dont know what he will choose, but he is tired of working hard for tips. He cant take the jerks anymore. When you are raised to be polite and others arent, and then they dont tip on top, well, I cant say that I blame him.
Hes also in the music industry which took a hit. Thats his real passion. Its starting to come back, but just starting.
Hes ready to learn new skills. This time they need to be in businesses that arent likely to shut down, because we all know, if the Democrats win, more lockdowns are on the way.
I don’t have problem with servers giving you the extra special sauce with your meal.
