When I was in the Navy, we visited Italy quite often. There were pizza vendors with push carts. A 6” or so cheese pizza for a buck or two. Served “liquid magma “ hot out of the oven. Really good after a few beers.

You make a very hot fire in grill 1st
75+ coals
You put the pizza together on a pizza plate
Fresh dough, leave out, stretch with floured
hands, I spray a little baking PAM on plate 1st
and spread in circle so I don’t have to use
those polenta grains
a teaspoon or 2 of regular olive oil
Sauce fresh or prepared (Rao pizza sauce
from the jar from Italy is good) shredded cheese
(I like whole milk) (You can use fresh white)
(Greek style is mix of White Cheddar and Mozz)
Any topping you like I like pepperoni sliced
thin, cooked shrimp, salami, sausage, bacon
I put sauce then toppings but tomato pie is
Reverse
Put the plate on hot bricks cover grill
When can pick up (not stuck to plate) After
a few minutes use pizza peel and put
on bricks directly
Turn every few mins
Roughly 15 20 mins a beautiful crisp pie

Forgot important step
once flames die down
(If use match light need to burn off fuel
it will not taste like lighter fluid if you do)
Put bricks on grate to conduct heat
Try to have them room temp at least before
When very hot to touch put pizza on bricks

It took a lot of trial and error and burned
dough. I saw someone else on YouTube
use the bricks where they were on edge
like Stonehenge putting the plate on
that that worked pretty well so I got the idea
from them
but I find laying them flat like the floor of
a “real” pizza oven is best
Bricks cost about $2.50 each in Lowe’s
Fortunately in the NYC area I can get
fresh dough at Italian stores bakeries or in the
supermarket.

Idiot! Nothing magical about fiber. Too much flour in pizza unless you go with a very thin crust. Fat from cheese? Bring it on!

BTW - since I started increasing my fat intake to help with intermittent fasting, my blood pressure has dropped 40 points!
