Gonna be losing a lot of jobs in the fast food markets....and butcher shops.

He uses the same butcher shop to butcher/age/ and to prepare his wild game that I used 40+ years ago.

Any game he puts done is immediately field dressed and air aged until he gets it to the butcher shop.

All of their end products are great.

The best is wild elk and wild boar.

Sounds a lot like our late spring, summer and early fall menu.

I grill a lot then, and my wife has become a master of Mediterranean meals similar to your menu.

We have a local butcher who makes our sausage instead of hot dogs.

She plans for more than we can eat for dinner to be leftovers for breakfast or lunch.

Hand made soups and stews often with local veggies are our main dinner most nights and again leftovers for lunch.

Minimal carbs and the rest good veggies with real meat and fish are the basics of our dinners and leftovers for lunch.
