Do all beers get stronger with age like this?

To the best of my knowledge (which isn't that extensive on this topic), no.

Most beers and ales are to be consumed fresh.

A very few ales get better with age.

possibly mixed an ale yeast with champagne yeast which has a very high
tolerance to alcohol...in my old home brewing days you would make high
gravity beers in this manner...start it with an ale yeast which would peter
out at about 8% and then finish it with champagne yeast
