And we noticed that our new checkbooks have two or three fewer checks in them than in the past. I think it used to be 25, now it’s maybe 22. Same cost as before.

In Britain, eggs aren’t refrigerated. My jaw dropped the first time I visited a new neighbor and saw her eggs sitting out on the counter in an egg holder.

Eggs go bad because air seeps in through the pores in the shell. If you coat them with food grade mineral oil it fills the pores and you can keep them unrefrigerated for up to a year.

If you don’t wash the protective mucus coating off the egg, they last quite well on the counter in a basket.

Washing eggs is why we have to refrigerate them. That, and we keep them for several weeks rather than a few days.

Would this apply anywhere but Arizona? Sounds like a pricing gimmick to be able to charge more for fresh eggs.

That, however, drew protests from Glenn Hickman, who runs the Arizona egg ranch that bears his family name. He said that after the 24th day, the eggs just don’t meet that Grade AA standard of that firm yolk and egg white.

How do they know what the inside is like of they can’t see through the shell?
