I read an interesting book on the Irish Potato famine. The typical farmer planted potatoes and had a dairy cow. Milk and potatoes, if u eat the skin, pretty much have all your vitamins and minerals covered.
Would get boring after a while.
Well all that says is that there weren’t diabetic at that point. Does not mean they won’t have problems later on.

Yep. I lost 59lbs in 2 months on it some years back (230 down to 171). Cooked, cooled and reheated is the key. Converts the starch to “Resistant” - good gut bugs love it, wonderful things happen to your body and blood chemistry - and you burn fat for energy.
