My grandmother used to can fresh ground pork sausage seasoned with pepper and sage in Mason jars. While it certainly wasn’t appealing to look at while in the jar, with a thick layer of fat congealed on the top, it was the best sausage I’ve ever eaten. There were quite a few nice hams hanging in her smokehouse in my childhood. They used salt with a little brown sugar, then smoked them hanging in cheesecloth.

Not everybody is able to do that, cooking their own fresh ham. You can soak a salt cured ham in water for about 24 hours to reduce the saltiness, as I mentioned upthread.

When I was growing up, we called it white bacon. It was not pre sliced like smoked bacon. It was sold in slabs and the women used it to season with. From time to time mama would slice some off the slab, boil it to get rid some of the salt and fry it for supper or breakfast. She would make a baker of biscuits and make a gravy from the bacon grease. We would have syrup with biscuits and bacon and gravy.

Yeah, a piece of fatback in with the greens or beans is standard seasoning. Never heard it called white bacon. Just fatback.

If it’s not in stores where you are, it can be ordered online, lots of different companies. Edwards in Virginia is a favorite, but not cheap:

My Polish Grandma would grind up Salt Pork and cook it with fresh cabbage and sauerkraut, yellow split peas and onions. My Aunts still make it that way. A big pot kept a lot of people fed.

I went to a Waffle House in Virginia that did not have them, but when I go through the Waffle House drive-thru in Raleigh, NC, they have country ham biscuits. Mmmm!

I've heard of making salted ham by placing a fresh whole ham in a clean 5 gallon bucket, filling it with kosher salt, put the lid on and leave it for 3 months. Supposed to come out looking like prosciutto.

Supposed to come out looking like prosciutto.

Which would be unsurprising, inasmuch as prosciutto is country ham 'gone Italian', as it were. Love them both, but know with my hypertension, I shouldn't eat either at all. Ah well, no one gets out alive anyways...
