Liquid nitrogen is dirt cheap ,, after all it’s 75% of the air we breathe , abundant doesn’t begin to cover it... For small batch ice cream like this they generally create a “base” and add flavors so that they have very little waste and no refrigeration costs for storage... It takes a powerful mixer .. the largest sold for home use are about right... If they are good at showmanship they do the “mad scientist” thing with their workers dressed in lab coats and wearing goggles..
Should have done a real sweet cherry syrup with tiny bits of cherry solids IMHO.
I wonder if their products have any dairy products at all.

Typically for liquid nitrogen they will use a very high fat content cream base so that it solidifies quickly.

Maybe they'll serve it up in a red biohazard bag.
And, if I had an ice cream shop, I’d create a vanilla ice cream with cherry cordial and little candy babies in it.
Called it the “missing generation”.
