I’m sorry, but low/no carb works for me. I’m healthier, happier, in less pain, sleep better... there just is no better state for my body to be in. Heck, even my guts work better. Anxiety and depression lifts. Blood work straightens out. Blood pressure drops. Hormones smooth out. Muscle aches and pain stops. Muscle spasms stop. IBD stops.
I’m not one of those people who thinks that *my* diet is the perfect diet for every human being. But low carb is where my body (and brain) are happiest and healthiest.
My mom eats a ton of carbs. She’s healthy and has energy. I don’t recommend that she changes a thing.
He is highly prominent in the debate over GMO's, and his presence there means he sees himself as having something significant to offer. He doesn't. He just thinks he does. An honest man would decline from participating in any debate focused on the complex science involved. If he behaved in an honest fashion, he wouldn't be garnering huge lecture fees or selling books on a subject in which he's ill prepared to offer advice or opinion. He's become a multi-millionaire from making people believe he has a contribution to make to the debate. But he's just another crackpot who never bothered to learn even middle school biology. It's shameful.
You can't read Pollan critically because he has nothing of substance to offer, other than making uninformed pronouncements based on the works of others. Pollan has no idea where the truth lies because he doesn't have the skill sets necessary to understand the mammoth amount of literature out there. But that doesn't seem to stop him. Like I said, he's laughing all the way to the bank....and that's exactly what's wrong with scientific debate in this country today. We've turned to charlatans for our knowledge, and we'll get what we deserve.

But the main thrust of the article is that man isn't meant to eat grains. I didn't see a section that allows for legacy grains or alternative grains such as spelt or quinoa.
I agree that man isn't meant to eat grains. We aren't evolved to digest seeds and grasses. However, bread made from nut flours [pistachio, almond, etc.] are digested by our bodies with gusto.

I gave up eating refined sugar and carbs a few months ago. My blood pressure has normalized off meds. My cholesterol (triglycerides) plummeted even though I am eating butter, cheese and other fats. No more cardiac palpitations and I have lost 40 lbs in weight. I have my health back and I do not begrudge him a penny of the money he makes from this book.
If everyone just ate half of what they eat, the world would be a better place.
Probably, but I’d like it to be my idea, not something thats forced onto me.
Those are healthy foods.
