Any one who keeps some hens has a surplus now and then and makes egg salad. It is comical sometimes how the freshest eggs just will not peel! I ended up baking cracked eggs in muffin tins. Usually I ended up throwing out a lot of boiled egg whites which just would not release from the shell.
