I will admit, that probably my favorite all-time BBQ place I’ve been to was the original Dinosaur Bar-B-Que in Syracuse, that I used to go to all the time when I was on business up there.
Love the 17th St Bar and Grill ribs in Murphysboro. The one in Marion, not so much. Good beans too!

Ah, but the huge difference is, in Texas you don’t need government permission to consume a sandwich like the one in the pic. Nanny Bloomers would be pawing in there with his sausage fingers, removing half the ingredients.

You’re right, y’all have the BEST Barbecue, Pizza, theater, movies, police, parks, airports, politicians , schools and people.... Don’t come down here, we’re awful and backwards. In fact if you could arrange to kick us out we’d be grateful.
Good BBQ is a technique that can be learned through trial and error by anyone in any state of the union with a mind to do so, and the time to put to it.
In fact, I bet there are some Texans behind some of that NYC bbq.
While I loved the wet and dry Texas brisket, and the spareribs were very good as well, none of the Texas joints I’ve been to know squat about pulled pork. Hello North Carolina!
The tastiest BBQ imo are the small pork ribs whch have a lot of curve in them. Also a lot of fat. Most of the fat drips out but enough stays to keep the smokey flavor. I don’t know what the best sauce to put on the meat while it is cooking.
After it is done, I like a mild pickle and whatever else the put in that greenish vegetable sauce which you then eat with the meat.
Brisket can be good eaten the same way but still the ribs are best.
All funnin’ aside, it really is a matter of regional taste.
I have some family up in PA, they soak their sandwiches with some sort of vinegar, they’re all yum, yum, and I’m just trying not to gag.
IMO there is nothing wrong with any state being proud of its regional fare, but to claim to be the best, well, perhaps best for the region, and folks from other states should enjoy it as such.
With the exception if TEXAS, which has the best dang BBQ anywhere!
