I lived in Louisiana for 9 years and never heard of anyone eating them raw either. Always boiled, in gumbo or etouffee.

Those nasty little craw fish! I've tried everything from serious Cajun seasoning, vats of butter/lemon and more hot sauce than humanly possible and they STILL taste and smell like the muck they live in! Eat one raw? No thanks.
