I haven’t made this one yet, but I had lost my favorite Pineapple Zucchini cake recipe and this is very close.

Pineapple Zucchini Sheet Cake

1 1/2 cups flour
1 1/4 cups sugar
1/2 cup flaked coconut
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/4 to 1/2 tsp nutmeg
3 Tbls cooking oil
2 large eggs
1 tsp vanilla
2 cups grated, unpealed zucchini
1 20 oz can crushed pineapple, drained (reserve liquid)

Preheat oven to 350 degrees. Grease and flour a 9 x 13 cake pan. Combine dry ingredients in a large bowl. Stir with wire whisk.

Combine oil, eggs and vanilla. Stir well. Stir egg mixture and zucchini into flour mixture. Add drained pineapple to batter. Batter will be stiff and dry, but keep folding. It will come together. Add a splash of pineapple juice if necessary.

Spoon into prepared cake pan. Bake 30 to 35 minutes or until a toothpick, inserted into the middle, comes out clean. Cool completely on a wire rack. Frost with Cream Cheese Frosting.

My italian friend taught me a version of zucchini soup that is easy and fabulously light.

Cut squash into small slices that are bite size. (I quarter then slice it). Place in a pan and barely cover with chicken stock. Cook until the squash is tender. In the meantime, use a fork to beat an egg per serving in a bowl. Add a handful of parmesian cheese, salt, pepper and parsley. When the squash is tender, stir in the egg mixture and just let set.

Serve.

Umm ummm good.

Cool and wet is one thing. Needing an ark for your garden is another. All my zukes have croaked from the amount of rain. And my peppers look horrible.

Zucchini. Ick. Better to grow the (much better tasting and easier to pick just right) yellow summer squash. :’)
