I have a new freezer and planned on using coke bottles filled with water to help fill it up for energy efficiency’s sake. I thought the frozen water would do well as a source of water if need be. Should the plastic be ok in that capacity?

Just don't fill them all the way full. Remember, water expands when frozen.
