You can make some sourdough starter, and the yeast will make it rise. Some areas of the country have better spores than others. Usually, if grapes are grown in an area, the yeast spores are excellent.

I got a sourdough kit for Christmas one year when we lived in the Bay Area, and it was excellent. Las Vegas haas some tasty spores, as well.
