small jalapeno's for those who don't like them too hot, but they gotta have shredded cheddar cheese on top of chili with mustard.

So you probably never heard of a Texas Tommy... others call it a Heart Attack on a Bun....

Get a thick hot dog, slice it and put cheese in the center, use toothpicks to wrap bacon and keep it from falling apart and then you cook it in hot grease.

Then throw that thing on a bun for the crazy idiot who wants to eat it.

Mustard and Kraut is best. Visited my brother in Michigan who introduced me to Brats on a bun sprinkled with curry powder. Pretty good.

Well, be sure to get the coarse-grind old fashioned kind with the intestine casings first - mmmm! Grilling can be done most anyway, but you might simmer them in beer and onions first. Once nicely grilled (but not burnt), I serve them on good bakery buns with fresh ground mustard and home canned vidalia onion relish and sauer kraut.

Something I invented out of necessity once...turned out great, has become a family favorite.

Yes,I've been to Mexico.

I've lived in Chicago and eaten my share of Flukies. I still DO eat hot dogs when I'm in Chicago visiting my daughter...it's a mother/daughter bonding experience. LOL

Yeah. We do. Not raw onions, the cooked ones in sauce. On any dirty water dog truck on the Island. They also do tubesteaks with chili and cheese.

Both of those ways are relatively NEW additions to N.Y. hot dog eating.

From the beginning,100 years ago,when Nathan's first opened, it was just deli mustard and sauerkraut and sometimes relish on a hot dog in N.Y.C.!

Even in the early '70s,pushcart vendors didn't put anything else on a N.Y, hot dog.

Early delis would serve larger hot dogs,split lengthwise,on rye bread,with just mustard and a side of deli coleslaw and pickles.I think that went by the boards in the early '60s,though.

Yeah, but he asked about tube steaks NOW, and I know lots of folks who eat 'em with onions, or chili and cheese. Personally, I prefer the sausage, peppers and onions, although it's hard to find done correctly. But then, my name ends in a vowel.

And a LOT of "New Yorkers" are transplants,who want their hot dogs they way they had them back home;not the way they'/re done in N.Y.C.! Besides,you said the Island,which isn't N.Y.C.! :-)

Also,NO native New Yorker,in the city,would call a hot dawg a "tube steak"!

Now,an Italian sausage hero,is something else and DOES require grilled onions and peppers.

Considering influence of Napa Valley and Hollywood, California Dog could be on French Roll, but has to have lotsa greens and a low-fat dressing. Avocado is healthy, but still just add thin strips.

Think "Subway" and you'll figure it out. I don't fiddle with regular dogs anymore. Just start with an excellent Polish Sausage. And big buns...
