I like the theme for the Austin Powers movies: they use it in every sequel too, so they don't have to write a new one. -- saving money. (At I think they used it in last one...must confirm.)

When men in tights actually wanted women and not boys. Or if they wanted boys they kept it quiet!

Patton
Star Wars
The Hunt For Red October
The Blues Brothers
The Natural
The Good, The Bad, and the Ugly
And the best foreign film soundtracks:
Cinema Paradiso
Amelie
Run Lola Run
Ennio Morricone is a good bet any day.

I don't care for any of the soundtracks you mentioned, except 2001, but the theme wasn't written for the film, so I can't count it.
Ennio Morricone is the best film composer of the 20th century, especially his music for Once Upon A Time in the West, Once Upon a Time in America, and my fave - The Good, The Bad, & The Ugly.
Jerry Goldsmith is also an enourmous standout.
Most overrated have to include John 'hack-man' Williams, and Danny 'I hope nobody figures out most of my scores sound the same' Elfman.

Black Orhpheus is stunning.
For "movie music", Hatari is fun. Mancini (all) has been mentioned, I think to include Days of Wine and Roses.
A Taste of Honey?

Charlie Chaplin Gold Rush.

How about the theme from South Park? anyone?
I also liked the music from Glory too....
And the music from We were Soldiers...
War movies generally have the better sound tracks..at least I think so....
