[In breeds bred for aggression and fighting, once an attack starts, it may be difficult to stop.]

Precisely. Traditionally, pets were bred for docility. That is to say, aggressive pups were culled (killed), while obedient ones were kept. What distinguishes dogs from wolves is that puppy-like docility with respect to humans. What these dog fighting breeders are doing is breeding pits for aggression - culling the docile and keeping the Cujos. They are turning dogs back into wolves. No amount of training will turn a wolf back into a dog. However well-trained, it is similar to a pet lion - a ticking time bomb for the owner.
