Wheat... Very finicky crop. Ever wonder why civilization initially thrived in certain latitudes? Look no further than wheat. There are other gluten producing grains but they are related cereals.
Wheat thrived in those conditions, yet other crops might not be so sensitive, such as oats or barley outside of those areas. Is wheat artificiality propped up to grow in regions outside of where it thrives naturally?
Is wheat so important solely because of glutin, or is it about the methane bovines produce?
BigWheat? Is BigWheat as powerful as Big Corn or is it all Big-Agra nowadays?
Give us corn! Or dried peas and rice. Or lentils!
Or swap crops? Big agra can’t farm on the fly. I wonder if independents can?

Grow chicken feed on scraps and waste, feed chickens, eat the eggs and the Cockerels keep the hens to grow your flock and trade for other things some piglets perhaps they get down on BSF which happens to be 60% complete protein, loaded with carbs and fats too.
