It may be a little beyond your capability, but the Samsung Galaxy S10e is an easily rooted phone with many custom ROMs available. You can take complete control of this phone. Whether it is a good idea for you... is all about you. If you are like my parents who are in their 80s and can only answer the phone about half the time... you should probably not be messing with it and just take the update. If you want to root the phone, you also should not take the update.
