Interesting question! There are, I believe, 11 federally protected classes (example: veteran status). Some states have added to that list.
A store cannot discriminate based on one of those protected classes. For example, a store cannot put up a sign saying “no veterans permitted”.
“Religious belief” is another protected class. So one might argue that forcing a customer to wear a burqa or Swastika runs afoul of that protected class. I dunno. If some store were goofy enough to make that requirement, it would probably go to the Supreme Court.

Maybe some ADA lawsuits will change those companies’ minds about mandating masks.
