Actually, they took out the Musashi, Yamato’s sister ship, even before that, during the Battle of Leyte Gulf, in October 1945.
The Yamato wasn’t sunk until April 1945.

Cheap jeep carriers. Put a couple of slow moving p3 Oriens on board with lots of antiaircraft missiles and it might survive a couple days in battle.
I have always maintained the USN should have bought a bunch of those empty tankers at Singapore and convert them to warships. Cheaper than building new ones and you can load up a lot of ordnance. Armor the crap out of the superstructure, outboard fuel tanks with water to absorb hits. You could quickly put land based ADA and SSM on board or go full USN with VLS and CWIS.
The brits did almost exactly that strategy, in a few WEEKS, by outfitting tankers and cruise ships with flight decks for their Harriers on the way to the Falkland Islands.
Harriers are second only to F15s in Air-to-air kill ratios in combat. It’s something like 200:0 forHarrier, 350:0 for the F15.
Harrier went up against what should have been superior aircraft like the Super Etendard and Mirage.
Harrier went up against F15s in Military exercises such as Decaminnou (sp?) in 1982 with kill ratios against the F14 and F15 of 3 or 4:1. Keep in mind the harrier was designed as a BOMBER, not a FIGHTER. The F15 is designed as an Air Superiority FIGHTER. It’s like saying your minivan can beat a drag racer off the line 3/4 times, but let’s watch that drag racer deliver groceries.
