Can you get paintballs filled with stink-bait or skunk juice?

you can make your own paintballs, I would suggest bleach for their black clothes. preferably a high concentration sanitizing bleach
You can buy pepper balls. They make your eyes and skin burn like crazy. Never looked for stink balls... might be a thing.
Just looked. Yes, you can! They’re called malodorant balls. They also sell spark balls which are the ones used in movies to “replicate” real bullet impacts.
