I have James Huston's book "Calculating the Value of Union" which analyzes 1860 census data to compare US economies North, South, East & West.

Huston shows, for example, that roughly half of American men were farmers, somewhat less in New England, more in the Midwest.
In States like Pennsylvania, 75% of farms were less than 100 acres and virtually none were over 500 acres.

But the Deep South was quite different.
There still 65% of farms were under 100 acres, but fully 85% of the land was owned by farmers with OVER 100 acres.
These were certainly plantations worked by slaves.

Huston also tells us that about 75% of small farmer's produce went for their own subsistence, not to market.
I think we can assume for large plantations, it was the reverse -- 75%+ to market, maybe 25% for subsistence.

These numbers give us the ability to calculate the percentage of cotton grown by slaves.
In 1860, white small-farmers owned 15% of total farmlands, on which they produced 75% subsistence food and 25% cash crops like cotton, so: 15% X 25% = ~4% of land went for cotton produced by white small-farms.
On larger plantations it was 85% X 75% = ~64% was plantation land planted in cotton.
Add 64% + 4% = 68% total for cash crops, of which white small-farmers produced ~6%.
In other words, virtually all cash-crop cotton was produced on larger plantations, by slaves.

Summary: about half of Southern white men were farmers, 65% of whom owned less that 100 acres, of which about 25% went for cash crops like cotton, or about 6% of all cotton produced.
The rest came from larger plantations worked by slaves.
