Not much detail to add. I had tail, and it tasted EXACTLY like chicken breast. Probably even easier to do chicken recipes with than chicken.
Yeah, I heard the tail is the best part. And since iguanas are so plentiful here, that might be all that I eat especially since I have better things to do with my time than spend it skinning and cleaning the rest of the iguana. Just chop off the tails, skin them quickly, and then cook.
