What do you ferment it in? IF it is not air tight it will pick up yeasts from the air and the flavor will change. And if you ferment in a refrigerator, it will pick up the odors/yeasts from what you have in there as well if it is not under cover with fermentation lock on it.

When I ferment cabbage, I have the mass under water and then the fermentor has an air lock on it.
