On the grill I reverse the sear. I cook the meat low and slow with indirect charcoal heat until it’s about 10 degrees from the goal, then brown it over the coals.
Yum! Will try that soon!

If anyone so much as touches my goats.... They are incredibly awesome. Each with different personalities. It would be like eating my horse or my dog.
They know how to cook it over in the Middle East. Typical pub fare while knocking back beers in a hotel bar was a plate of grilled lamb chops and french fries, with a cucumber salad on the side. Good stuff!
I ate a pulled lamb sandwich at the Hard Rock in Dubai. It was really good.
Made a pork roast in applesauce for a muslim.
I even shared a deli ham and swiss with an old Jewish lady.
Told the Hindus it was pork, the muslim it was beef and the Jewish lady gave me the half a sandwich. :)
