Went through the same mental gyrations and opted not to get a gun safe. Literally have a weapon in easy reach, but out of sight, anywhere in the house. Not likely to ever have the home invaded but will not be caught flat-footed if it happens.
Grand kids are now not in local area so seldom have reason to sanitize any area anymore.

My plan is very similar to yours.
Stored in unlocked containers that can simply be locked if people visit with kids.
Family, friends, and acquaintances have pretty much determined I am not a fan of "surprise" drop-in visits for coffee, so they call ahead.
It takes no more than a minute or two to lock everything if needed.
