Pit bulls are an easy study in canine muscles. You can see them pretty easily.
Hit a tendon, and that muscle group is down for the count. The dog has a lot more tendons in the chest than humans, and they criss-cross and anchor in areas that are exposed. I’m not talking about “shooting legs off”.

Depends. Black bears or Brownies? I live on an island with both; blacks on the North end, Brownies on the South. When hiking around the North end near town, I carry my .45, wife carries her .357.
When we go to the South end, I carry my .308, she carries the 12 gage with magnum bear slugs. One of us will probably also be packing a .44 magnum.
Shooting an agitated wild animal ... there is no ace in the sleeve for that.
Any animal from a handgun cartridge will take a few hits and of course you’re not doing weaver stance on them either. You have to slow them down so you can boogie as best you can.
Even a bear with a full mag emptied into it can get you. You will slow it down and retreat some ways before it finally falls.
As mentioned before, these animals will fall because of tendons being hit or muscle being ripped. When that happens, the animal physically can’t advance like it would unhurt.
In the woods carry something with a large capacity. A cat or something fast may take 8 shots just to hit it. They are wiley and hard to hit in the first place. Coyotes hunt in packs so they surround you too. There is rarely only one tracking you and about to pounce. They communicate.
If it’s possible, a small shotgun is a great outdoors protection option. A sawed off Spanish double barrel for instance. You can even holster it.

Every day carry requires something comfortable. A flat stack “mouse gun” 380 or some of the newer 9mm are a good choice. A reliable 380 is smaller than a wallet, fits in your front packet without printing, and can held in your hand (hidden in the pocket) before even being deployed. In a full size rig you’d have to pull back your clothing, unsnap the holster, and present it. That takes time and is obvious.
I couldn’t imagine carrying a full size 1911 all day long in the summer.
For home defense you can’t beat a shot gun.
If you ONLY want one gun for everything AND you want .45acp I would go with an XD 45 compact combined with a light laser combo.

I can carry a Glock 30SF (10 round .45) fine in a Vedder IWB holster. Recently I’ve been sporting a S&W Performance Center Shield in 9mm because it is a bit more comfortable for me.
Shoot what you are accurate with—although I’d personally shy away from anything less than a 9mm.

I have a Sig P-220 in .45 and some 10-round magazines. I don’t know what commercial ammo would make the best of it against a large animal. My Sig is I am sure minimal against a black bear but I can’t carry a rifle or shotgun everywhere. Black bears are a bit overpopulated here so they are something one can realistically worry about.
You know more about it than I do, so I will take your word for it. If you can disable a viscous animal at close range that is charging toward you by hitting the tendons then my hat is off to you. All that I would be capable of is hopefully making a few holes in it while aiming at the center of mass. Despite being confronted by many during my lifetime I have never had to shoot a dog.

Why not just crosshatch the nose of a .38 or 9mm bullet and make it into a dum-dum? Is that illegal?
Put a big russet potato in your shorts, they'll never notice the pistol.
No need, there are exceptional factory defense loads in both calibers which will expand consistently.
How many dogs have you killed?
