easier answer is to buy yourself some sodium citrate then any cheese sauce will have that creamy deliciousness

is that why when I put a chunk of it in the microwave it wouldn’t melt the way the stuff they put over the nachos is nice and runny? Sodium Citrate - hmmmm, I’ll put that on my to do list. Thanks for the tip.
