I used to really dislike the stuff. the cat would leave the house two weeks before Christmas and not return tip after New Year’s for fear of being slipped some. But those were the days when you still had to do a fair amount of soaking before cooking. The ladies at the church convinced my mom that baking was a no no so she did what they all did . boiled. Nothing like gelatinous white fish in a white sauce to just make life grand for a child’s palate.
Fortunately as freezing techniques got better so did the fish. And yes baking is much better than boiled.
Brown beans, meatballs, fruit soup, mashed roots (usually turnips but sometimes with rutabaga), boiled potatoes, cheese with caraway seeds, now I am just making myself crazy . and how could I forget pickled herring and ox eye???
Boiled lutifisk, it’s just awful. Horrible. That’s not what we eat.
The absolute best lutefisk dinner in the world is the First Lutheran Church in Duluth. Beatrice Ojakangas runs it it. Anyone who has had lutifisk made Bea will swear by it.
