They don’t seem to need refrigeration, as they are always hanging about for days if not weeks in the room-temperature store. All the stores that sell Jewish-style salami do that, not just Katz’s. In fact I seem to remember that some people like the dried-out ones better.
That’s what floored me about the overnight requirement.

Katz never showed up on the searches and I spent literally hours trying to find kosher salami somewhere. Now back to regular programming already in progress.
